Hi and welcome to HC!

Syrians are very terratorial and need to live alone. There is no need to introduce your hamsters to each other.

Graham Cracker probably bites the bars because he wants to come out and fight with the new hamster who is intruding in his territory so don't ever let them come near each other.

They will be fine living in the same room as long as they have their own secure cages and you take them out separately.

Graham Cracker should settle down again as soon as he realizes that the new hamster is no threat to him. I'd give him extra attention and treats to reassure him.

If he's eating, drinking etc as per normal and not showing any signs of an illness i wouldn't worry. Hamsters change their habits sometimes and have moods just like humans.

I don't think sharing a room with another hamster would stress him. I have four hamsters, a Syrian and a Robo live in one room and two dwarfs live in another. The dwarfs used to share a playpen box (not at the same time) and another two free roam in the same room but not at the same time of course. There is a lot of sniffing going on sometimes but that's all.

I normally have about 14 hamsters in my hamstery (plus a harvest mouse) and on a whole they're not really bothered by each other. Sometimes I notice that they'll act a bit strange for a few days if there's a new arrival or one has died (I guess the mix of scents change) but within a few days they usually settle.

Are their cages fairly close? I have noticed though that some of mine seem to be more bothered about living in closer proximity to particular hamsters than they are to others though so in those cases, I try to allow more distance between those cages. Charlotte (an older Chinese) for example, becomes wound up by Egg (a rather highly strung Syrian) so Egg's cage is placed on the furthest shelf away from Charlotte's cage.
