Default Need advice on stressed hamster

Hi this is my first time posting and I'm not 100% on how this works but I hope someone can help.

I bought my first Syrian hamster about 3 months ago, she was 7 weeks old then. I have been following loads of videos on taming hamsters and like loads of other posts I've seen she is very active and fast but she has always been quite skittish and scared I've been patient with her as I thought this was down to her being young but I'm not quite sure.

She used to go on my hand and eat food and let me stroke her but all of a sudden she has gotten really stressed like for example tonight I went in and opened the door slowly and she ran super fast into her den then later on when I was doing a bit of spot cleaning and russled the bin bag and she freaked she ran to the corner facing the wall and wouldn't move she looked petrified yet I've done this for months and she has never reacted this bad.

Ive been trying to get her in her ball so she has some outside time but I have to gently nudge her in as she usually stands there just staring for a while unsure what to do. I made my own cage which is 100cm x 56.6cm x 46.6cm which I thought would be big enough and I have put a lot of enrichment in there for her I just really don't know what to do. I hate that she's so scared of everything I just wanted to see if anyone had any advice. Thank you!!
