Default Taming follow up and advice

Over the last few days, I've been doing the general taming processes. Rubbing hands in bedding, toilet tissue trick and feeding him pumpkin/sunflower seeds or mealworms. However, last night I laid my palm out with some flax seeds on it and waited for him to get them. He was on his wheel and I put my palm out far to the left so he didn't feel trapped. He came up to my palm-surprisingly, as he is usually the shyest and nervous thing on the planet-and started sniffing my hand. Then he opened his mouth to the tip of my fingertip and it made me frantically lift my hand up in fear. I know hamsters do a slight nibble to investigate their surroundings but I was just washed away with the thought of him biting me. I have been bitten before and know how much it hurts, does anyone know how I can quickly get over this fear as I'm pretty sure this incident set us back in the taming process.

Also, I've noticed that he's getting up a lot later than any of my past Syrians. Like 0:30 am or onward. I know I should really be taming when he wakes up but I'm usually asleep at that point and staying up that late has really started to impact my health. Are there any slight tricks I can do to try and make him get up earlier like turning the light off earlier or using earphones so the room is silent to him?

When you put your hand down flat for him to take treats bury your fingertips in the substrate then he should go straight to the treat on your palm.
I know getting bitten does hurt but try not to scare him with sudden movements, it's unlikely he's going to bite you & you need to focus on making him feel safe & confident.
