A bit of nibbling anything new, including hands is normal, I think they're more inclined to bite a fist than a flat hand tbh so I'd would just try laying your hand flat, unmoving, with a seed or mealworm or something on it & she may well just walk onto your hand.
I wouldn't make any changes in the cage now unless it's really necessary, adding substrate is fine but changing anything else could set things back as she's settling in.

More substrate is coming in tomorrow. I will have to make a few changes in one side of the cage to allow for this. Its now filled with...houses, making it cluttered.

She does like mealworms and seeds, I hope she doesn't bite my fingers. To be honest, I don't have any experience with biting hamsters. My others where all tame/well socialized. I just hope she will enjoy her life after such a bad start here.

It's amazing how far she's come.

She's now called Florence! (Thought name meaning was fitting/ "Flourishing")

She absolutely hasn't bitten or shown any form of stereotypical behaviour.

She's very curious, loves to dig and likes it when you hide food.
I've been offering her various tasty treats, and she already places her frontpaws on my open palms. She even sat ony my hand today, eating food!
I 'bother' her about two times a day, when she's already awake. I don't wake her up otherwise. I talk to her and give her treats. and very gently pet het back about 10 times, then leave her be after about 4 minutes.

Adding more bedding and a few other items didn't bother her in the slightest.
She just kept on doing her own thing.

I was able to tease her a bit, by placing some seeds atop her head. As usual she didn't care.

Good to hear how well she's doing, sounds like she just needed a bit of TLC bless her.
Even if she isn't bothered I wouldn't do things like put seeds on her head, keep your interactions fun & positive in a way that a ham will enjoy rather than tolerate.
