You' probably are worrying a bit too much but then we all do that with our hams sometimes!
Mine was quite like yours when I first brought her home, eating everything in sight & making huge stashes (which she still does!) so I think that's probably not so unusual when they first come from somewhere like P&H where they've been in a little tank with nowhere to stash things so they go a bit mad!
The fact that she's doing it less now is most likely a good sign, she's more settled & doesn't feel she has to hide loads just to be safe.
If I remember rightly you moved her to a bigger cage which might be why she seems less friendly, with more space they have the opportunity to do their own thing & hide away more if they want to, she'll probably come around though & slowly get more confident again coming to your hand so just try to be patient & keep gently encouraging her when she's out & talk to her even if she's hiding somewhere.
Changing nest places isn't unusual, most hams do that from time to time. Try not to disturb her nest any more than you really need to, if you mess with it too much she won't feel so safe in there & may keep moving & be less inclined to come out to you, the same goes for her food stash, leave it alone as much as possible.
Mine is a little more cautious now the days are getting longer & lighter so your's may be behaving in a similar way too, generally I'd say changes in behaviour are quite normal as she's still quite new, Chinese can sometimes take quite a long time to get really confident so just give her time & go at her pace.
