All my gerbils are handleable. Rocket isn't keen on it, she's a bit wriggly. They're all trained to hop onto my hand for a treat. My hamster is very handleable too.
Yes, gerbils will notice when you get home, especially if you come bearing treats or cardboard. They will usually be quite handleable if you get them young and if you are patient with taming. Real biting is very rare but when young they may nip.
