My condolences on having a high-maintenance hamster!

The simplest solution that would definitely solve the problem would be to put her in a glass cage - she definitely wouldn't be able to chew that. But that would be expensive/a pain when you've gone to the trouble of DIYing her a cage.

If you can post a photo of her cage setup then the forum might be able to make suggestions of things to change in it to keep her occupied.
