I can’t see any reason why amaranth flowers wouldn’t be ok but can’t say for sure, I’ve never seen those sold only the seeds.
Not at all sure about cherry & strawberry, I would have my doubts about cherry.
Somethings it’s just difficult or impossible to find a definitive answer so it’s probably best to stick to leaves & flowers that are known to be safe, there are plenty of those to choose from.
