Definitely add a wheel, that won't affect your taming process at all, You should hopefully see a vast change in his behaviour once you add a wheel, needs to be 11-12 inches for most syrians.
In the wild they run for miles every night so your hamster is probably a little furstrated and bored without a wheel as he has nothing to get rid of his excess energy, hence the bar chewing.
