From the research i've done you can handle them as long as your hands are wet and you have nothing like moisturisers and soap that can be absorbed by them. I've seen people handle them by holding them on things like leafs of lettuce to avoid skin contact, but as long as there's nothing harmful it should be fine! I think you can interact with them at any size, but I'm assuming the smaller ones may be slightly scared to begin with. I much prefer the plastic/glass terrariums but bin cages are an option, It will just be harder to see in I assume.
