Sometimes you can tell by personality. At about a year old they are middle aged and sort of in their prime. Still active and healthy and fairly chunky even, but with a kind of confidence a younger hamster doesn't have and a slightly mature look (I've only had male hamsters so not sure if it's the same for female). At 18 months old they may start to look a bit thinner and more gaunt but still be perfectly healthy.

Having said that, our rescue Syrian was a year old and he will never be chunky but has that kind of confidence and surety about himself.
