The remaining third I froze and defrosted yesterday and we had it for pudding. I had never been a fan of fresh cream in cakes as it seems so rich - until I saw a recipe by Delia Smith that stirred two tablespoons of lemon curd into the whipped cream, and that makes it perfect! Ever so slightly lemony and less rich tasting.
