I would also mix the two for a bit but in my experience changing them off Harry Hamster pellets and onto a more suitable diet has been really easy and they've loved the new food.
I personally think insects are a really important part of their diet and is the best way to raise protein levels since that is closer to what they would eat in the wild. Apart from Ratrations I'm not sure where else sells shrimp unfortunately. I'd still give the crickets etc a go as some hams do love them!
