A second hand Plaza sounds great!
Personally I don't like to use bleach & prefer to use an unscented pet safe disinfectant like Sage4 or F10 but as far as I know you can also use baby sterilising stuff.
When people talk about one level they do mean the actual overall floor space no matter how much stuff you put in, having to climb over things or dig under things is the fun bit! To a ham it's still the same amount of floor space.
