Teeth chattering can mean a variety of things, when your handling your ham it could mean contentment or it could mean fear so you have to take it in context & look at the overall behaviour.
They can be quite noisy munching on their food so that may be what you hear at night, if he is chattering his teeth it may possibly be that something to do with his cage is bothering him & not quite right.
