I've given my Chinese Hamsters (Chinese are also a diabetes prone species) a small amount of scrambled egg on occasions although they're not overly keen on it.
If you're making some anyway, there's no harm in giving her a small amount although for a first taste I'd tend to give them a slightly smaller amount than I'd give if it was something that they'd eaten before and enjoyed.
