I had precisely the same problem with my female Maple. All she wanted to do was gnaw the bars! At first I moved her downstairs just at night but this became impractical when I extended her cage. Then I tried Chew Stoppa, which I found only worked when it was still wet on the bars and she still chewed when it dried. In the end I moved her into a Zoozone 2, she has a Savic rolly wheel and has been in there for about 18 months. She's had a happy life in there and bonus - no chewing! What I do to keep her amused is hide food inside loo roll tubes and because she is quite persistent she'll chew for a good half hour to get it all out. I also use the tiny chocolate drops and rub them over wooden chews which gets her chewing the wood and not other parts of the cage! I noticed in any case that she got less obsessive with chewing as she got older. Since converting to the Zoozone2 for my female I have also done so for one of my males as it is far safer for preventing falls.
