My hybrid dwarf used to bit me every time I went near her. It wasn't a defensive thing, more of a "is this tasty?"

I found i no longer got bitten when I stopped reacting - not tasty and not a threat. Picking her up by the scruff of her neck to check her teeth (even though she wouldnt show me her teeth) stopped it completely.

My syrian has only bitten me once in the past few months (maybe longer)

That was because I tried to stop her falling off my hand. She probably thought that I should have let her learn the hard way not to jump off from a height.

Its all down to the individual hamster. My friend's hamster doesnt bite - he just wees on you.
